Easy Pasta Primavera

Let's face it, we are all busy moms!  Whether you're the stay at home mom, who runs after the kids all day, trying to keep the house livable and playing taxi with your mom mobile.  Or you're the mom who works outside the home and finishes up at work only to have to pick the kids up at daycare, make dinner, do homework and well you get my drift.  Each way of life brings its benefits and challenges, but something that both have in common is having time to serve easy, fast and healthy meals to our family. 


I believe every meal should include fruit, veggies or both.  This recipe is so delicious and easy and with all the veggies pretty healthy too!  No it's not all homemade, but it's the next best thing.


EASY STYLE PASTA PRIMAVERA

What you will need:

1 jar of Classico 4 Cheese Alfredo sauce
1 block of Kraft Philly Cream Cheese
1 red pepper (sliced)
1 medium onion (sliced)
1 cup chopped broccoli (optional)
1/2 teaspoon dry dill weed
1 tablespoon of butter
1 lb. box penne pasta

In a frying pan on medium heat, melt the butter and add the sliced onions, red peppers and broccoli.  Cook the pasta as directed on the package.  In a saucepan heat on low the alfredo sauce and melt in a half block of the cream cheese.  Make sure to stir regularly.  Add the dill weed to the sauce and keep on low heat until the vegetables are tender and onions browned.  Once pasta is cooked and strained, in the pot add the veggies and sauce.  Toss until pasta is coated thoroughly. 

Garnish with a sprinkle of dill weed on top of each plate.  This recipe makes four servings. Quick and easy to make, approximately 30 minutes until table ready! Enjoy!
